The focal point of my Research is micronutrients. At the moment focused on intake and bioavailability of micronutrients from sustainable diets. Climate changes and the urge to transform current dietary habits to more sustainable (plant based?) diets may improve the intake of some nutrients, but also decrease intake of others. How do we assure that the dietary transistions are not detrimental for health due to lack of some nutrients?
