Research and innovation: I am leading the Research Group on Climate and Food Security where we are conducting research on climate smart agriculture and sustainable food production systems, including intercropping, regenerative agriculture, agroforestry and urban farming with a focus on protein sources for plant based diets to reduce GHG emissions and improve human health. I am working on innovative solutions for food system transformation and climate change mitigation by applying crop modelling, environmental indicators, life cycle analysis, GHG accounting and decision support systems to increase resource use efficiencies in the food value chain. I am the coordinator of the EU H2020 FoodSHIFT2030 project, which is focusing on transforming the European food system toward a low carbon circular future, including a shift to less meat and more plant-based diets. I was leading Pillar 1 in the H2020 LANDMARK project, where I was coordinating the development of the online Soil Navigator Decision Support System for farmers and advisors. I have contributed to several national and EU projects related to sustainable food production and climate change and led several national innovation projects funded by the Ministry of Food, Agriculture and Fisheries of Denmark.
Education and teaching: I am the Academic Coordinator of the EnvEuro MSc programme in Environmental Science and leading four courses on environmental management and climate change, including the online courses Environmental Management in Europe and Climate Change Impacts, Adaptation and Mitigation, and the on-campus courses Climate Change and Land Use and Climate Solutions, where students are working as consultants to support food sector companies in finding innovative solutions for reducing their GHG emissions.
